Crock pot dinners

Dinner is a difficult time around our house. My husband works nights so he is leaving around 5:00 and me and the boys are at my daycare job until about 5:45.  I feel bad enough that my husband is left at home to find his own dinner and eat by himself every night, but on top of that coming home at 5:45 and starting dinner when the kids are starving is hard! Usually I have no plan for dinner. So I come home and open the refrigerator and think of something then start cooking.  So we are not eating until about 7:00 and Jack, my youngest, goes to bed at 7:30. So he pretty much eats then goes to bed.  And lately Jeremiah has been falling asleep on the couch before dinner is even done! So I decided to try something new. Crock pot meals! Ok, it is not new because I have been using a crock pot for some time now.  Usually my crock pot meals are soups, whole chickens or some kind of big chunk of roast. I was not aware that you could make things like meatloaf in a crock pot. My sister informed me of this last night. After she told me this I immediately got online and started researching some crock pot dinners.  Since I am home in the mornings I can prepare everything and get the crock pot going. Then when my husband is hungry for dinner he has a hot meal waiting and then when me and the boys get home we also have a hot meal waiting. Hopefully these recipes are good because just the thought of coming home to a hot meal and not having to do anything is making me feel so much less stressed! I will let you know how the recipes are!!
