Starting to feel a little bit better. Not all the way though. I had a doctors appointment today. He said everything looks great! They should be calling about when the ultrasound is. I am really excited to find out what it is! The weekend was bad on eating and I drank sodas! Every time I drink sodas I gain like 3 or 4 pounds then lose it pretty fast so lets hope I lose a few pounds because as of this morning I was up a total of 13lbs! That would mean I gained 5 lbs in a week. Like I said, sodas make a huge difference so I am hoping tomorrow I can put that I lost some of that 5 lbs! Here is what I ate today.
Breakfast: 2 scrambled eggs with diced ham and little bit of cheese. Cantelope
***after the doctors appointment I cheated and got a sausage mcmuffin at Mcdonalds
Lunch: Big salad with broccoli, cauliflower, red peppers, yellow peppers, orange peppers, tomatoes, little cheese and shrimp. *that is the first picture
***I cheated again and stopped and got a can of ski on my way to daycare because my head was killing me!
Dinner: Baked pork loin and asparagus. The pork loin was not very good however the asparagus was the best asparagus I ever had! I got the recipe off of ehow. The only thing I changed was I used McCormicks Vegetable seasoning instead of the Lemon Pepper.
Instructions
Things You'll Need:
- A bunch of fresh or a bag of frozen asparagus spears
- A med sized skillet or shallow pan
- butter, lemon-pepper seasoning
- a few pinches of rosemary (optional)
- 2 tbsp butter
- Make sure you choose a frying pan or shallow pot that will allow you to cover the fresh asparagus with water by about an inch. You'll want to put this pot on the stove with that much water in it. Turn the heat up to medium high. Cut off the bottom 1-1/2 inches of the fresh asparagus spears. Make sure you've washed it well and gotten any dirt or grit from under the small tough leaves along the length of the spear. Once the water starts to make steam that trails up like smoke, you want to go ahead and put the asparagus in.
- Keep the fresh asparagus in this water for 5 minutes. You don't want the water to boil, so you may have to adjust the heat a few times. You just want the water to stay at the point that it is making that smoke/fog-like steam. Once the asparagus has been in this water for about 5 minutes, the asparagus spears should have relaxed and they should look like the picture. Dump all of the water off and put the pan back on the heat.
- Next cut about 2 - 3 tbsp of butter over the fresh asparagus. Sprinkle about 1 tsp of lemon pepper seasoning over the asparagus and a few pinches of rosemary. Turn the heat down to medium. Allow the butter to melt before you begin moving the asparagus around. It will only take about 1 minute or so. When the butter has melted down to the bottom of the pan and starts to sizzle, it's time to start shifting the asparagus around.
- Take a large flat fork or small spatula and pick up some of the asparagus and lay it down on the opposite side of the pan. Keep doing this rotation until all of the asparagus has been moved/shifted around through the butter and the pan. You can't stir asparagus or treat it with a heavy hand or you'll make a mess of it. Just keep picking them up and putting them down in different areas. I call it the asparagus shuffle. You only need to shuffle the asparagus 2 or 3 times. Let it rest and cook between shuffles. After about 2 minutes of this turn the heat off. You're all set.
